Ingredients of Dhaba Style Chana Masala
- Take of For boiling chana in cooker.
- It’s 1 Cup of Chana soaked 6 hours.
- Prepare stick of Cinnamon.
- Take 2-3 of Dried amla.
- You need 2 of Black cardamom.
- Make ready 2 tsp of Black tea.
- It’s Cloves of 3.
- You need 1/2 tsp of Baking soda.
- Take 2 tsp of Salt.
- Make ready 2 cups of water.
- You need of For chana masala.
- It’s 3 tbsp of Coriander powder.
- Prepare 1 tsp of Turmeric -.
- Take 2 tsp of Red chilli powder.
- It’s 1 tsp of Cumin powder.
- It’s 1.5 tsp of Ginger powder.
- Prepare 1/2 tsp of Amchur.
- Prepare 1 tbsp of Garam masala.
- Take of For making chana masala gravy.
- Make ready 3 tbsp of Ghee.
- Take 1/2 tsp of Asafoetida/hing.
- Prepare of Onion 1 big finely chopped.
- You need 1 tbsp of Green chillies paste.
- It’s 1 tbsp of Ginger & garlic paste.
- Take of Tomato 2 (puree).
- Take of Curd 1/2 cup(optional).
- Make ready of Salt as per your taste.
- Take 1 cup of Water.
- You need of Dried fenugreek leaves 1 tbsp.

Dhaba Style Chana Masala step by step
- Soaked chana dal for 6-7 hours. And add soaked chana in cooker with water. now make potali of cinnamon sticks, dried amla,black cardamom,black tea,cloves in a muslin cloth.
- Add this potali to the cooker of boiling chana make the 6 whistles..
- Once cooked discard the potali.
- Now for chana masal take one bowl and mix all spices in bowl with little water and make paste..
- Now take a pan and heat the ghee now add asafoetida, onions and add ginger garlic paste and cook onions till they turn golden brown..
- Now add spices mix paste and add tomato or curd cook till tamoto turn soft and mushy now add green chillies paste and saute for a minute..
- Now add cooked chana in gravy..
- Add 1 cup water and cook for a 10 minutes..
- Now add some dry fenugreek leaves and off the flame..
- Serve hot along with kulcha, nan, paratha…
