  1. Chop onions finely.
  2. Fry in butter with cinnamon and cardamom till golden brown.
  3. Add chicken and braise on medium heat till it starts drawing water.
  4. Pound coriander, chilli, coriander seeds, cumin seeds, garlic, ginger and salt in a mortar and pestle to form a fine paste and add to the chicken with the turmeric.
  5. Add masala according to taste. Allow to cook for a few minutes. Add a little water if the masala starts to stick to the bottom of the pot.

  7. Add about a cup of water (use less if cooking with mushrooms).
  8. Cover and allow to cook on medium heat for 20-30minutes or till the potatoes are just tender.
