  1. Make ready 1 of zucchini, sliced.
  2. Prepare 1 of onion, diced.
  3. You need 4-6 cloves of garlic, minced.
  4. Make ready 1 lb of ground turkey.
  5. Prepare 1 cup of corn.
  6. You need 2-3 handfuls of spinach, chopped.
  7. Prepare 1 jar (28 oz) of crushed tomatoes.
  8. Take 1 can of black beans, drained & rinsed.
  9. Take 1 can of kidney beans, drained & rinsed.
  10. It’s 2 tbsp of chili powder.
  11. Take 2 tbsp of cumin.
  12. It’s 2 tsp of oregano.
  13. Make ready to taste of Salt & pepper.
  14. You need of Olive oil.
  15. It’s 1 of avocado, diced.
  16. Make ready to taste of Shredded cheese.
  17. Prepare pieces of Tortilla chips, broken into small.
  18. Make ready to taste of Sour cream.
  19. Take of Chicken stock (optional).

Turkey & veggie chili instructions

  1. In a large pot, heat about 2-3 tbsp olive oil. Add onion and zucchini and cook until almost done..
  2. Add chili powder, cumin and garlic, stir well and cook for just a couple minutes to release flavors..
  3. Remove onion/zucchini mix and set aside. Add turkey to same pot and cook until browned..
  4. Add onion/zucchini mixture back to pot. Add tomatoes, black beans, kidney beans, corn, spinach, oregano and salt & pepper. Stir well..
  5. If chili doesn't look soupy enough (not enough liquid) add some chicken stock until desired consistency is reached. Note: be careful not to add too much as chili gets more soupy as it cooks..
  6. Bring to a boil, then turn heat down to low, cover and cook for 20 minutes..
  7. Top with shredded cheese, sour cream, avocado and tortilla chips..
  8. All done! Enjoy.
