- It’s of Fresh mint.
- It’s of Almonds.
- Make ready of Pecorino.
- Make ready Half of a lemon.
- It’s of Olive oil.

Courgette Glut Carpaccio instructions
- Grab ur courgettes and use a peeler to cut them into thin ribbons.
- Toast up ur almonds and chop em into small chunks.
- Grab some mint from your extensive and well maintained herb garden (here I’ve used Tashkent mint and Black mint cos it’s well delicious yeah?) Chop it up too.
- Chuck the mint, almonds, grated pecorino, olive oil, salt and pepper and the juice and zest of half a lemon on top of ur courgettes. Then toss it up. voila, as they say in Italy..
