  2. You need 1 lb of italian sausage.
  3. Prepare 1 medium of onion, diced.
  4. Prepare 1/2 cup of chopped zucchini.
  5. You need 4 medium of cloves garlic, minced.
  6. Make ready 1/2 cup of panko breadcrumbs.
  7. It’s 1/4 cup of shredded fresh parmesan.
  8. Prepare 1/2 tsp of garlic salt.
  9. Take 1/2 tsp of paprika.
  10. You need 1/4 tsp of black pepper.
  11. You need 1/4 tsp of cayenne pepper, optional.
  12. Make ready 1/4 tsp of oregano.

  14. It’s 1 cup of mozzarella, shredded.

Stuffed Portobellos step by step

  1. Using a spoon, scrape the gills from the mushroom caps but leave the stems intact..
  2. Remove sausage from casing and crumble into a frying pan. Over medium heat, cook sausage and onions until halfway done. Add the zucchini and cook until they begin to soften..
  3. When sausage is fully cooked, add minced garlic and cook for 1 minute..
  4. Remove from heat and mix in breadcrumbs, parmesan and spices..
  5. Fill mushrooms with sausage mixture and bake at 350°F for 20-25 minutes..
  6. Top with mozzarella and return for a few more minutes until cheese is melted..
