- Make ready 5 numbers of Brinjal Medium sized.
- You need 3 numbers of potato Medium sized.
- You need 2 of Onion Big.
- Take 4 cloves of Garlic.
- Prepare 3 numbers of Green chilli.
- Take 2 numbers of Tomato Medium sized.
- Prepare 1 tsp of Coriander powder.
- It’s 1 tsp of Sambar powder.
- It’s 1/2 tsp of Turmeric.
- Prepare of Salt as needed.
- Take of Season :.
- Make ready 2 tsps of Coconut oil.
- Prepare 1 tsp of Mustard.
- It’s of Curry leaves few.
- Prepare of coriander leaves few.
Brinjal Potato Gravy (Eggplant thogayal) step by step
- Dice brinjal, potato, Onion, Garlic, green chilli, tomato and keep aside.
- Heat the pressure cooker. Add oil. Once oil is hot, add mustard and let it crackle and then add curry leaves. Add 3 cups of water to the cooker. Add the rest of the ingredients brinjal, potato, onion, green chilli, garlic, tomato, coriander powder, sambar powder and salt.
- Pressure cook for 4 whistles.
- When the pressure is released, mash the contents and cook till it reaches the consistency of a gravy.
- Garnish with coriander leaves.
- Serve hot with idli or dosa.
