- Make ready 500 grams of basmati rice.
- Take 700 grams of chicken.
- It’s 4 of onions.
- You need 2 tbsp of ginger garlic paste.
- You need 10 of green chillies.
- Make ready 4 of bay leaves.
- Make ready of Whole spices(to be ground coarsely):.
- It’s 2 tbsp of fennel seeds.
- You need 2 tbsp of coriander seeds.
- You need 4 of clves.
- Make ready 4 of green cardemom.
- You need 1 of black cardemom.
- You need 1 of "cinnamon stick.
- Take 6 of cloves.
- It’s 10 of pepper corns.
- You need 1 tbsp of red chilli powder.
- You need 1/2 cup of curd.
- You need 150 ml of ghee/oil.
- Make ready 1 tea spoon of kewra water.
- Make ready 1/4 tsp of orange food colour.
Chicken Biryani (UP style) step by step
- Wash and soak basmati rice for 1 hour.Keep aside..
- Heat oil /ghee in a pan.Slice 2 onions longitudinally and fry till golden brown.Take out and keep aside..
- Chopped 2 remaining onions,fry in the remaining oil.Fry till golden.Add ginger garlic paste and green chillies..Saute for 1 minute..
- Add chicken,all powdered spices and all coarsely ground spices.Add bay leaves also.Stir and add curd..
- Add salt and 1 cup water cover and cook for 5 minutes on medium flame.After 5 minutes open the lid,stir the chicken well and cook till oil separates..
- Add basmati rice and 4 cups of hot water to the chicken.Cover and cook on high flame till boil..
- Lower the flame to sim and cook till rice is done.Add kewra water.Dissolve orange food colour in 1/4cup milk and pour over biryani.Cover the lid and leave for 10 minutes..
- Garnish with fried onion and serve hot with raita /salad..
