  1. Make ready 1 of ripe Mango.
  2. Take 1/2 of Red onion finely chopped.
  3. It’s 1/2 of Pomegranate seeds.
  4. Make ready 1 of Red or Green Jalapeño finely chopped.
  5. Take 1 cup of Cactus finely chopped.
  6. Make ready 1 of lime Juice & Zest.
  7. It’s 1/2 cup of chopped Coriander.

  1. Peel & slice the Mango. Sear in a hot non stick pan for 30 seconds each side then remove from heat allowing it to cool.
  2. Toss remaining ingredients together in a bowl..
