Ingredients of Sugar Free Mango Custard

  1. Prepare 2 of Very Ripe Mangoes (Alphonso Preferred), Peeled And Cubed.
  2. You need 2 of Large Egg Yolks.
  3. It’s 1/4 Cup of Chopped Dates/ Grated Palm Jaggery / Stevia Or Any Sweetener Of Your Choice -Adjust Quantity.
  4. You need 1 Cup of Full Fat Milk/ Thick Coconut Milk.
  5. Make ready 2.5 Tbsp of Corn Starch.
  6. You need 3-4 Tbsp of cold chopped Mangoes For Garnish.

Sugar Free Mango Custard instructions

  1. Add cubed mangoes to blender/ grinder. The sweeter and riper the mangoes, the better.
  2. Add dates or palm jaggery or stevia etc. Sweetener can be of your choice. The quantity required will depend on sweetness of Mango too.
  3. Blend mangoes with sweetener to form smooth puree.
  4. Add egg yolks and blend again for few seconds.
  5. Mix cornstarch With 1/4 cup milk until lump free. You can use Coconut Milk as substitute in case of dairy allergy.
  6. Now add cornstarch paste to mango mix and blend until well combined. Check and adjust the sweetness of the mango mix as per desired taste, since the sweetness will reduce once all ingredients are mixed so adjust the sweetness now.
  7. Heat remaining milk in saucepan over low heat. Do not boil.
  8. Now gradually add the mango mix to saucepan and stir. Do not add mango puree mixture all at once.
  9. Mix well until lump free and well combined over low heat..
  10. Over low - medium heat, keep stirring the custard until it starts thickening.
  11. Allow custard to cool to room temperature.
  12. Pour the custard in serving bowls. Cover and refrigerate for minimum 1-2 hours.
  13. Garnish custard with chopped mangoes, fresh mint sprigs or as desired. Serve cold.
