Ingredients of Kerala / Nadan Chicken Roast

  1. Make ready 500 gm of Chicken.
  2. You need of For Marination.
  3. Make ready 3 tbsp of Curd.
  4. Take 1 tsp of Red Chilli powder.
  5. Take 1/2 tsp of Turmeric.
  6. Prepare to taste of Salt.
  7. Take of For gravy.
  8. Take 4 of Onions thinly sliced.
  9. Make ready 2 of Tomatoes chopped.
  10. Prepare 2 of Green Chillies slit.
  11. It’s 2 sprig of Curry Leaves.
  12. Take 1 tbsp of Ginger garlic paste.
  13. It’s 2 tsp of Coriander powder.
  14. Take 2 tsp of Red Chilli powder.
  15. Make ready 1 tsp of Fennel powder.
  16. Prepare 1 tsp of Chicken masala or garam masala.
  17. Make ready 2 Tbsp of Coriander leaves.
  18. You need 4-6 tbsp of Coconut oil.

Kerala / Nadan Chicken Roast instructions

  1. Marinate chicken with salt,curd turmeric and red chilli powder. keep it aside for 2 hours.
  2. Heat 2-4 tbsp oil in earthen vessel, add onion, green chilies.
  3. Add little salt and curry leaves.
  4. Saute until onions are completely soft and medium browned.
  5. Add ginger garlic paste and saute until raw aroma goes away.
  6. Add spice powders and mix well.
  7. Add chopped tomatoes and saute until mushy.
  8. Add coriander leaves and marinated chicken. mix well.
  9. Cover and cook, stirring occasionally until cooked..
  10. Increase the heat, Water should completely evaporate.
  11. Add 2 tbsp oil and further dry roast or leave it slightly moist. Serve hot with Rice, Pathri or Parottas.
