  18. You need 1 teaspoon of coriander powder.
  19. You need 1 teaspoon of crushed fennel seeds.
  20. It’s 1 teaspoon of dry mango powder (amchur powder).
  21. It’s 1/2 teaspoon of sugar.
  22. Make ready 1 pinch of asofetida.
  23. Make ready as required of salt.

Baked flaky Kachoris step by step

  1. Take 3 cup of maida to a big mixing bowl..
  2. To that add in yeast, ghee or oil, sugar and salt. Mix well with a spatula..
  3. Now add in 1 cup of warm water and mix well.You may need more water to make the dough, but don't add more water at first..
  4. With your hand mix and knead to make a soft and pliable dough. Add warm water as needed to make the dough. The dough will be soft and elastic..
  5. Rub some oil to the dough, cover and keep aside(relatively warm place of your house) for an hour to proof it..
  6. For the stuffing clean and soak moong daal with water for about 2 hours..
  7. After 2 hours drain the water and grind coarsely in a grinder..
  8. Place all the spice powder in a bowl..
  9. Then heat a pan. Add ½ tablespoon ghee..
  10. Once the ghee melts, switch off the flame. Add all the spice powder together..
  11. Cook in very low heat.Make sure that the spices do not burn. Add in 1-2 teaspoon of water if needed..
  12. Then add the coarsely ground moong dal. Also add salt,sugar and 1 pinch of asafoetida..
  13. Saute with non-stop stirring for 3 to 4 minutes on a low flame..
  14. Check the taste and if required you can add more spice powders like red chili powder and mango powder,sugar or salt..
  15. At last add in grated cheese and mix well until cheese melts..
  16. Remove from heat and let the mixture become cool down..
  17. Now make small balls from this moong dal mixture so that you can easily stuff the balls to the kachoris..
  18. You can also spread some oil on your palms while making the balls. Keep aside..
  19. After an hour of resting the dough, take it out and transfer to a work surface..
  20. Knead again for few minutes. You can rub some oil in the surface to ease the kneading process..
  21. Divide the dough into 4 equal parts..
  22. Take one part and roll to a very thin round disk. Rub melted ghee to roll.Roll as thin and possible..
  23. Rub some melted ghee all over the disk. Also sprinkle dry flour and rub evenly..
  24. Fold the roti from both ends to the centre. Again rub some melted ghee and flour all over..
  25. Now from the centre again fold to make a long rectangle shape patty. Again rub ghee and flour..
  26. Now start rolling the patty from one edge (short side)to the other edge something like we are doing to make laccha paratha..
  27. We will get now a multi layered log of dough..
  28. Cut the log into 3 parts with a sharp knife..
  29. Take one part, roll to make 3 to 4 inch size round patty. Try to roll in such a way that the centre becomes thick than the sides..
  30. Hold the patty in your palm, make a cavity..
  31. Take a stuffing ball and place in the cavity..
  32. Seal the ball with the patty nicely. Press a little to give a kachori shape. Place it to a lined baking tray..
  33. Preheat oven at 200 degree C for 10 minutes..
  34. Brush each kachori with little milk which will give a nice colour after baking..
  35. Bake them in the preheated oven for about 30 minutes or until they become light golden brown..
  36. Delicious, healthier version of kachoris are ready now to enjoy. Serve with a cup of tea or coffee..
