Ingredients of Potful Mexican Rice
- Make ready 1 cup of Basmati Rice.
- It’s 1/2 cup of finely chopped onion.
- You need 1 teaspoon of garlic paste.
- It’s 1/4 cup of colourful bell peppers (green, red and yellow).
- Make ready 1/4 cup of green peas.
- Make ready 1 of tomato.
- Take 2-3 teaspoon of red chilli powder.
- Prepare 2 tea spoon of jeera powder.
- It’s 1table spoons of of oregano.
- It’s 2 tablespoons of of chilli flakes.
- Take 1-2 teaspoon of tomato ketchup.
- Make ready 1/4 cup of Rajma.
- It’s 1/4 cup of sweet corn.
- Take 1/4 cup of Jalapeno.
- It’s 1/2 cup of cheese.
- Prepare 3-4 teaspoon of oil.
- You need as required of Coriander leaves.
- Make ready 1.5 cup of water.
- You need to taste of Salt.
Potful Mexican Rice instructions
- Clean and soak 1 cup of rice into water for 15-20 min.
- Prepare tomato puree (grill tomato and then make puree from it by removing it's skin).
- Boil Rajma and sweet corn keep aside.
- Heat a pan add oil. Once oil is hot add onion, garlic paste fry it until it cooks completely..
- Add finely chopped bell peppers (green, yellow and red), green pease and mix it well..
- Add Tomato puree, red chilli powder, jeera powder, oregano, chilli flakes, tomato ketchup and mix all ingredients..
- Now add soaked rice for 1 cup of rice add 1.5 cup of water. Mix it well and close the lid for 5-8 minutes..
- Now open the lid add boiled rajma, sweet corn, jalapeno, Coriander and salt to taste. Close the lid again and let it cook until rice cooks completely..
- Now switch off the gas add 1/4th cup of cheese to it and mix it well..
- While serving add remaining cheese on it. And have the yummiest spicy Mexican Rice.
