Ingredients of Potful Mexican Rice

  1. Make ready 1 cup of Basmati Rice.
  2. It’s 1/2 cup of finely chopped onion.
  3. You need 1 teaspoon of garlic paste.
  4. It’s 1/4 cup of colourful bell peppers (green, red and yellow).
  5. Make ready 1/4 cup of green peas.
  6. Make ready 1 of tomato.
  7. Take 2-3 teaspoon of red chilli powder.
  8. Prepare 2 tea spoon of jeera powder.
  9. It’s 1table spoons of of oregano.
  10. It’s 2 tablespoons of of chilli flakes.
  11. Take 1-2 teaspoon of tomato ketchup.
  12. Make ready 1/4 cup of Rajma.
  13. It’s 1/4 cup of sweet corn.
  14. Take 1/4 cup of Jalapeno.
  15. It’s 1/2 cup of cheese.
  16. Prepare 3-4 teaspoon of oil.
  17. You need as required of Coriander leaves.
  18. Make ready 1.5 cup of water.
  19. You need to taste of Salt.

Potful Mexican Rice instructions

  1. Clean and soak 1 cup of rice into water for 15-20 min.
  2. Prepare tomato puree (grill tomato and then make puree from it by removing it's skin).
  3. Boil Rajma and sweet corn keep aside.
  4. Heat a pan add oil. Once oil is hot add onion, garlic paste fry it until it cooks completely..
  5. Add finely chopped bell peppers (green, yellow and red), green pease and mix it well..
  6. Add Tomato puree, red chilli powder, jeera powder, oregano, chilli flakes, tomato ketchup and mix all ingredients..
  7. Now add soaked rice for 1 cup of rice add 1.5 cup of water. Mix it well and close the lid for 5-8 minutes..
  8. Now open the lid add boiled rajma, sweet corn, jalapeno, Coriander and salt to taste. Close the lid again and let it cook until rice cooks completely..
  9. Now switch off the gas add 1/4th cup of cheese to it and mix it well..
  10. While serving add remaining cheese on it. And have the yummiest spicy Mexican Rice.
