Ingredients of Cashew Chicken Curry

  1. It’s 5 of Chicken Thighs.
  2. It’s 2 of Onion chopped.
  3. Make ready 3 of Tomatoes diced.
  4. You need 1 tbsp worth (mashed) or use 1tbsp of Ginger ginger paste.
  5. Make ready 3 cloves of Garlic use garlic paste (mashed).
  6. Prepare 1 of Chilli Pepper slit lengthwise.
  7. You need 1 tsp of Turmeric Powder.
  8. You need 2 tbsps of Cumin Coriander & Powder.
  9. It’s 1 tsp of Chilli Powder.
  10. You need 1/2 tsp of Cumin Seeds worth.
  11. Make ready of Salt.
  12. Take 2 tbsps of Oil.
  13. It’s 3/4 cup of Cashews finely ground.
  14. Take 3/4 of Yogurt  yogurt plain.
  15. Prepare of Coriander leaves Fresh for garnish.

Cashew Chicken Curry step by step

  1. To the heated oil, add the cumin seeds, onion, garlic, ginger and the chilli pepper.
  2. Sauté until the onions have softened. This should take about 5 minutes. Next add the masala powder,.
  3. Now for those who don't have the spices I have mentioned, 3 tbsp of curry powder from the store will be fine too.
  4. Stir the spices through and allow it to cook for a couple of mins. Next add the chicken and some salt, stirring to coat well. Finally add the tomatoes, 1/4 cup of water and bring it to a simmer.
  5. Let the chicken cook through and tomatoes get all mushy. Add some salt again if needed.
  6. While the chicken is cooking, grind the cashews in an electric spice grinder to a powder.
  7. Right before serving, add the ground cashews and the yogurt. Gently mix it all together.
  8. Garnish with freshly chopped coriander leaves.
  9. It's a great dish to go with some white rice or make it extra special by serving it with some coconut rice.
