Ingredients of Kaddu ki Sabzi

  1. Make ready 4 tsp of oil.
  2. Take 1 of bay leaf.
  3. Prepare 1 tsp of cumin / zeera.
  4. Take 1/4 tsp of methi / fenugreek.
  5. It’s 2 of chilli, slit.
  6. Take 1 tsp of ginger paste.
  7. Prepare 600 grams of pumpkin / kaddu, cubed.
  8. Take 1/4 tsp of turmeric.
  9. Take 1 tsp of kashmiri red chilli powder.
  10. Make ready 1/2 tsp of coriander powder.
  11. Prepare 1/2 tsp of garam masala.
  12. It’s 3/4 tsp of salt ½ cup water.
  13. Prepare 1 tsp of jaggery.
  14. Take 1 tsp of aamchur / dry mango powder.
  15. Take 2 tbsp of coriander, finely chopped.
  16. Take 2 tbsp of Fresh Mint chopped.

INSTRUCTIONS firstly, in a large kadai heat 4 tsp oil and saute spices. also, saute 2 chilli and 1 tsp ginger paste until it turns aromat. further, add 600 grams pumpkin and saute for 2 minutes. additionally, add spice powder and ¾ tsp salt. saute for 2 minutes until the spices are well combined. add ¼ cup water, cover and cook for 10 minutes stirring in between. cook until the pumpkin is cooked well..
  3. Now add 1 tsp jaggery, 1 tsp aamchur and ¼ cup water.mix well and cook until the pumpkin absorbs all the flavour. finally, add coriander & mint and enjoy kaddu ki sabzi with roti..
