Ingredients of Zesty Fish Curry

Zesty Fish Curry step by step

  1. First bring the water and the dried chillies to a boil. Remove it from the heat.
  2. While the chillies was boiling away, I dry roasted the coriander and cumin seeds and ground it a fine powder.
  3. Back to the dried chillies, transfer it to a food processor and add the garlic cloves and grind it to a fine paste. To this add the ground powder, and the lemon juice. Once well mixed, set it aside.
  4. Take a large deep pot and add some oil. Once the oil heats up, add the thinely sliced onions and saute until its translucent.
  5. Next add the spice paste and cook for 10minutes. Then add in the coconut milk and the 1/2 cup of water, the chile powder and give it a quick stir.
  6. As it starts to boil, add the cut pieces of cod fillet, season with salt, reduce the heat to low, cover the pot with a lid and let it cook.
  7. Remove from the heat and slowly transfer the fish curry to a serving dish, make sure the fillets don't fall apart! Garnish with freshly chopped coriander leaves.
  8. Serve hot with some freshly steamed white rice.
