Ingredients of Achari Methi kadu
- Prepare 500 GM of long Green pumpkin (shredded).
- It’s 3 cups of fresh and clean fenugreek leaves.
- You need 1 of onion (diced).
- It’s 2 of tomatoes (diced).
- It’s 6 cloves of garlic (sliced or chopped).
- You need 2 of green chillies..sliced.
- It’s 1 inch of ginger…grated or Julien cut.
- Prepare 1/4 cup of oil (if you want you can use more than it).
- Take of Fresh coriander as per need.
- Take of Whole spices.
- You need 2 of cinnamon sticks.
- Prepare 2 of bay leaves.
- Make ready 1 of black cardemom.
- It’s 3-4 of Curry leaves.
- It’s of Achaar masala (homemade) you can use readymade too…
- You need 1 tbs of red chillies powder.
- Prepare 1/4 tsp of crushed red chillies.
- Prepare 1 tsp of Cumin powder.
- Take 1 tsp of coriander powder.
- Make ready 1/2 tsp of turmeric powder.
- Take 1/2 tsp of fennel seeds.
- Prepare 1/2 tsp of black seeds (kalonji).
- Take 1/2 tsp of fenugreek seeds.
- You need 1/2 tsp of mustards seeds.
- You need 3/4 tsp of salt or as per taste.
- Prepare 1 tsp of chaat masala…
- You need 3-4 tbs of If you are using readymade masala then use.
Preparation for achari paneer takes no time and can be prepared in a jiffy.Achari paneer is a spicy, tantalizing paneer curry with pickle like taste and can be served as an accompaniment with rice, roti, partha etc.Achari Paneer Recipe(with Step by Step Photos).Achari Gosht Recipe or Achari Mutton is a wonderful yet rare Awadhi cuisine of Uttar Pradesh which is cooked with mutton bringing out pickled flavors or achari flavors into it.
Achari Methi kadu step by step
- Prepare your ingredients and cut the veggies….
- Peel,wash and shred the pumpkin….
- Prepare your achar masala and whole masala ready.
- Clean and wash fenugreek leaves properly….roughly chopped it and keep aside….
- Take big wok or pateela add in oil, sliced garlic and whole garam masala….fry on low to medium flame until light brown and aroma comes…..
- Now add diced onions and tomatoes, achar masala, curry leaves in it…..
- Cook for 3 to 4 minutes only and add fenugreek leaves…..
- Stir for 3 to 4 minutes more and now add shredded pumpkin and leave on steam cooking by covering with lid for 5 minutes only….
- After steam cooking just stir constantly for more 2 to 3 minutes to dries out the water….add green chillies and Julien cut ginger…turn off the heat and cover it for more 1 minute until aroma of ginger and chillies absorb in the veggies….tadda yummmmmmmmm kadu methi is ready……
- Enjoy with hot nan or chapati and with fresh seasonal salad…. Garnish with fresh coriander.
- #Special note..I don't boil the methi as in this way the original taste, nutrition and aroma can be wasted…so avoid to boil the methi or spinach.. if needed just blanched it in it's own water…..
