As the name suggests, this version of the popular Indian kadhi is distinguished by the use of fresh mango pulp, which is combined with the choice of yogurt or fresh curd and besan (gram flour). Mango Kadhi is a delicious medley of sweet and sour flavors laced with freshly roasted spices.

Ingredients of Mango kadhi

  1. Prepare 1 cup of raw mango pulp.
  2. Take 1 cup of ripe mango pulp.
  3. Make ready 3 tbsp of besan (bengal gram flour).
  4. Make ready to taste of salt.
  5. You need 1 cup of buttermilk.
  6. Prepare 1 tbsp of oil.
  7. You need 1 pinch of asafoetida (hing).
  8. It’s 1/2 tsp of mustard seeds (rai / sarson).
  9. Make ready 1/4 tsp of fenugreek (methi) seeds.
  10. It’s 2 of slit green chillies.
  11. You need 6-8 of curry leaves (kadi patta).
  12. It’s 1/2 cup of boondi.

Kadhi prepared with raw mango has a very different taste then kadhi prepared with curd.Usually pakoras are not added in this kadhi but small chunks of raw mango are added.It is basically Mango Kadhi made with Mango puree and Chickpea Flour with some Spices.It is tangy, hot, sweet and simply delicious.

  1. Combine the raw mango pulp, ripe mango pulp, besan, buttermilk and salt in a bowl and whisk well till it turns to a smooth mixture. Keep aside. Heat the oil in a deep pan, add the asafoetida, mustard seeds and fenugreek seeds and sauté for few seconds..
  2. Add the curry leaves and green chillies and sauté for 2 minutes. Add mango-buttermilk mixture and little water if required, mix well and bring the kadhi to boil. Simmer for 10-15 minutes and add the boondi and simmer for 5 more minutes. Serve hot..
