Githeri (Gĩtheri), also called muthere or mutheri, is a Kenyan traditional meal of maize and legumes, mostly beans of any type mixed and boiled together. The maize and beans are mixed together in a sufuria or pot, water is then added and the mixture boiled until the food is cooked and ready to eat.

  1. It’s of Pre Boiled Maize n Beans.
  2. Take of Carrots, cubed.
  3. Prepare of Tomatoes, cubed.
  4. You need of Onion chopped.
  5. It’s of Bell pepper n Coriander chopped.
  6. Make ready of Garlic n Ginger, grated or crushed.
  7. You need of Avocado to Serve with.

Githeri aka Succotash instructions

  1. In a Pan, put your onions, Bellpepper n oil. Cook for a minute or two. Add carrots and let them cook for a minute..
  2. Add the tomatoes ginger n garlic. And spices if you like. Cook covered for two minutes. Add the beans n maize, some bit of water and let cook til well done..
  3. Add Coriander when just about to serve..
  4. Enjoy with your Avocado..
