Ingredients of Mexican Succotash
- Make ready 1 cup of Uncooked yellow rice ( or whatever you prefer ).
- Make ready 2 1/4 cup of Water ( may vary by rice type ).
- You need 1 can of Black Beans ( or use fresh!! ).
- Prepare 1 can of Kidney Beans ( or fresh!! ).
- Take 1 can of Diced Tomatoes.
- Make ready 1 can of Sweet Corn.
- Make ready 1 each of Diced Onion.
- Take 1 can of Sweet Peas.
- Make ready 1 each of Diced Carrots.
- Prepare 1 each of Green Bell Pepper.
- Take 1 each of Diced Celery.
- It’s of Light Adobo, black pepper, paprika, sea salt.

- Add everything in a big pot and cook until rice is tender! ( My yellow rice to about 35-40 minutes ).
