- Make ready 4-5 of Potatoes.
- Prepare 1 cup of Onion chopped.
- It’s 1 cup of Frozen/ fresh peas.
- You need 1 cup of Frozen Sweetcorn.
- Make ready 1 cup of Capsicum chopped.
- Prepare 1 cup of Pepper chopped (orange red).
- Prepare 1 cup of boiled rice.
- Prepare 1 tsp of Olive oil.
- You need 1 tsp of Garlic chopped.
- Prepare 1/2 cup of Zucchini chopped(optional).
- It’s 1 tsp of butter.
- Take 1/2 tsp of Red chilli powder.
- Make ready 1 tsp of Salt.
- Take 1 cup of Cheese grated.
- Prepare For of Tomato basil puree.
- You need 1 of Tomato chopped.
- You need 8-10 of Basil leaves.
- You need 2 of Garlic cloves.
- Make ready 1/2 tsp of Salt.
- You need 1/4 tsp of Black pepper.
- Prepare 1/2 tsp of vinegar.
Stuffed Potato Boats instructions
- Peel the potatoes and washed it, cut in half and remove middle portion with spoon to make boat shape.
- Tomato basil purée- Cook everything together in pan for 2 mins and make purée in blender, can use readymade sauce.
- This purée can be store for 1-2 weeks which can use for Pasta, curry and burritos.
- In pan take oil on medium flame, cook onion garlic.
- Add all veggies and spices and cook it 2 mins.
- Add tomato basil purée and rice and mix well, add salt.
- Apply butter on below side of potato and filled the filling in it.
- Baked it at 450 F degree for 15 mins then sprinkle cheese on it.
- Baked again for 5 mins and serve hot with Ranch, sauce.
