Ingredients of Plantain and Chicken Frittata
- Prepare 2 sticks of plantain.
- Take 2 of fresh tomatoes.
- Take 3 of habanero pepper.
- You need 1 of red bell pepper.
- It’s 1 pinch of oregano.
- Make ready 1/2 cup of vegetable oil.
- Make ready 1/2 cup of shredded cooked chicken.
- You need 1/2 of bulb onions.
- Take to taste of salt.
- Make ready 1/4 of milk.
- You need 4 of eggs.
- Make ready 1 handful of Parsley leaf.
- Take of cooking spray.
Plantain and Chicken Frittata instructions
- Preheat oven 220degree.
- Slice plantain toss a little salt and set aside; heat up frying pan add vegetable oil and fry plantain, drain with a paper towel and set aside.
- Dice tomatoes, pepper, red bell pepper, onions and set aside.
- In a seperate bowl break eggs, add milk whisk and set aside.
- Heat up frying pan and add 4tbsp of vegetable oil, start frying the shredded chicken, for about 3 to 4 mins add the onions, tomatoes and pepper, fry for about 4 mins, then add the bell pepper, stir and turn off heat.
- Spray cooking spray in a baking dish and layer fried plantain, (I planned for 2 layers) add the first batch of fried tomatoes sauce on top of the plantain and pour the first batch of milk, place the final batch of plantain on top of the first batch and add the remaining tomatoes sauce and pour the remaining whisked egg.
- Send the baking dish into the oven for 10mins, remove from oven and garnish with fresh parsley leaf..
