Latin Yellow Rice. hahaha funny I was craving huevos rancheros but opted for huevos a la mexicana.I will have to now try these sometime this week.These were good for Americanized Huevos Rancheros but nothing like authentic.One thing they need is a good ranchera sauce (not salsa) but the recipe I tried from here was not very good so I'll keep.
Cheat's Huevos Rancheros instructions
- In a heavy based flat pan, add oil on a low-medium heat.
- Add chorizo, sausage and onions, mix and as the sausage meat cooks, break it down with a spoon.
- Add Lloyd Grossman sauce and Spicy Sarinade and mix.
- Increase the heat to a medium high to cook off the water.
- Crack the eggs in to the spicy tomato mixture and cover with the lid, cook for 5 minutes.
- Take the lid off and reduce the sauce further to a thick consistency. Once the desired consistency is reached, switch the heat off.
- Add coriander, jelapenos, red onion, sour cream and feta cheese..
- Place the corn tortilla in a frying pan, turn over after 20 seconds, wait another 20 seconds and transfer it to a plate, repeat for the other tortillas.
- Heat the refried beans in the microwave for 2 minutes and spread a heaped spoon evenly on each tortilla.
- Spoon the mexican egg mixture on to the torilla and garnish some more or eat it with guacamole.
