- Prepare of For Spinach Gathiyas.

- Prepare 1 Cup of Washed & roughly chopped Spinach.

- Take 1/2 inch of Ginger piece.
- It’s 6-8 of garlic cloves crushed.
- Make ready 1 tbsp of Cummin seeds.
- You need 1/2 tbsp of Carom seeds.
- Take 1 tbsp of Hot oil for binding.
- Take to taste of Salt.
- Take of Oil for frying.
- Make ready of FOR Mohanthal/Besan Fudge.
- Make ready 1/2 kg of Besan Coarse flour (Ready available).
- Prepare 400 gm of Amul Ghee.
- You need 250 gm of Khoya(unsweetened).
- You need 1 of big pinch of Saffron flakes.

- You need 250 ml of water.

- PREPARATION of Spinach Gathiyas.
- Wash Spinach..and roughly chopped it.Add to Mixer Jar,add green chillies ginger and garlic.Grind it into paste..
- In flat bottom plate mix, Besan, Spinach paste,Salt, Cumin seeds and Carom seeds and Hot oil..
- Bind into Soft Dough.. Make four equal portions from the Prepared dough..
- Heat Oil..for frying.When heated..lower the flame.Place Gathiyas tawa with handle on Oil Kadhai. Apply oil on it…Place one portion of Prepared Spinach-Besan Gathiyas dough..as Shown..
- With left hand hold the Gathiyas tawa firmly..and now withYour right hand palm rub the placed Spinach -Besan Gathiyas dough on Gathiyas Zara..in opposite direction.. without taking up your palm..rub it till all dough portion is used..
- Pat the Gathiyas Zara…handle..with left hand so raw Prepared Spinach-Besan Gathiyas will drop into hot oil.Fry the Spinach Gathiyas till Crispy..
- Clean the Gathiyas Zara with flat spoon..to remove dough mixture.from both side.. before preparing other batch of Gathiyas from other portion.(The Gathiyas Zara need to be clean.. to make another batch..so Gathiyas dough easily get into holes of Zara).

- Store Prepared Spinach -Besan Gathiyas in Airtight container..
- For PREPARATION of Mohanthal/Besan Fudge.
- In Kadhai add Ghee..melt it..add Coarse Besan flour..and Mix Well.On slow flame roast for 25mins it is till light pink colour..
- Add crumble Khoya in it.and mix well..
- Add A big pinch of Saffron flakes and mix well..
- Again roast this Besan-Ghee Mixture for 10mins to get golden brown colour and nice Aroma of roasted Mixture comes.Off the Flame..
- In another vessel add Sugar and water..to prepare Sugar Syrup..
- Boil this Sugar Water..to get 1-1/2strings Sugar syrup..
- Add this Prepared Sugar Syrup to prepare Besan Ghee Mixture…Mix well.On the flame..mix & Stirring the Prepared Mixture for few minutes..
- Pour this PREPARED MOHANTHAL /BESAN FUDGE in greased Thali..
- Sprinkle Cardamom powder, Almonds flakes and Pistachio flakes.Cool completely before cutting into squares pieces..
