  1. It’s 1 1/4 cup of uncooked white rice (or Quinoa).
  2. You need 1 3/4 cup of water.
  3. Make ready 1/2 cup of chopped onion.
  4. Prepare 1/2 cup of chopped green bell pepper.
  5. Prepare 1 cup of zucchini squash, peeled and diced.
  6. It’s 1 cup of chopped mushrooms.
  7. Make ready 1 tbsp of minced garlic.
  8. You need 2 tbsp of olive oil.
  9. Take 1/2 cup of grated parmesan cheese.
  10. It’s 1 tsp of oregano (or italian seasoning mix).
  11. Make ready 1 of salt & pepper to taste.

  1. Saute veggies in olive oil till soft. (I used the insides of the zucchini for stuffed zucchini boats.)

  1. Add in water and bring to a boil. Turn off heat and cover and let sit till most all water is absorbed. If substituting with quinoa reduce to a low simmer and stir occasionally until liquid is completely absorbed..
  2. Stir in Parmesan cheese and extra seasoning if desired serve..
