Chole Masala is an Indian food recipe (Punjab). We generally eat chole as a evening snack garnished with chopped onions and coriander leaves or eat it with puri or bhatura (Indian bread) for. -chole masala is spicy and tempting curry of punjabi cuisine in india. it is prepared from white chick peas,tomatoes,onion and basic indian spices and can be enjoyed with masala puri or even bhatura.

Ingredients of Puri Chole Masala

  1. Take 2 cups of Chickpea (Safed Chole).
  2. You need 1 of no. Tea bag.
  3. It’s 2-3 pieces of Bay leaves (Tej patta).
  4. Make ready 3 cloves of Garlic.
  5. Prepare 3 pods of Black Cardamom.
  6. Make ready 1/2 teaspoon of Bakingsoda.
  7. Prepare to taste of Salt.
  8. Make ready as needed of Water to boil chole.
  9. It’s 1 teaspoon of chole masala.
  10. Prepare 1 tablespoon of Pomegranate seeds powder (or whole seeds).
  11. You need 1 tablespoon of Coriander powder (sukha dhaniya) (or whole seeds).
  12. You need 1 tablespoon of Roasted cumin seeds (or regular cumin seeds).
  13. You need 1 teaspoon of Black Pepper powder.
  14. You need 1 tablespoon of Kala namak (Black salt).
  15. Prepare 1 teaspoon of Red chilli powder.
  16. Make ready 1 teaspoon of Cinnamon Powder (or cinnamon sticks).
  17. You need of assembling chole ingredients.
  18. Prepare 1 of medium Onion,chopped.
  19. Make ready 1 of medium Tomato, chopped.
  20. Make ready 1 tablespoon of Chopped Ginger.
  21. Prepare 2 tablespoon of Chopped cilantro leaves.
  22. Make ready 2 tablespoon of Oil.

Puri Chole Masala instructions

  1. A night before- clean, wash and soak chole overnight.

Soaked chole all puffed up.

Assemble all the ingredients needed to boil chole.

Drain soaked chole water and wash it under clean tap water..

  1. Add chole to a pressure cooker and add all the ingredients one by one.

Pressure cook for nearly 20 minutes or until chole are soft and tender.

Keep it aside..

  1. CHOLE MASALA

Assemble all the chana masala ingredients.

Leave these four out - black salt, red chilli powder, cinnamon powder and roasted cumin seeds…..

  1. Transfer all the spices to a pan and on a low flame dry roast all of the spices till they start omitting their aroma. Be careful not to burn the spices. Keep them aside..
  2. ASSEMBLING CHOLE

Final step is to assemble the chole.

In a kadhai heat oil, add onions, ginger and saute for 2 minutes on a medium flame. Mix in chopped tomatoes, salt and mix till they are fully blended..

  1. Cover and cook for 2-3 minutes till tomatoes are soft and tender.

They will look like this - all mushy.

Mix in the roasted dry spices and the left out 4 dry spices - black salt, red chilli powder, cinnamon powder and roasted cumin seeds…..

  1. And give it a good mix.

Add 1/4 cup water and bring it to a boil.

As the oil starts to separate..

Mix in boiled chole…

And cook for another 4-5 minutes on a medium flame..

  1. Bring it to a boil, add chopped cilantro leaves and mix..

Delicious and mildly flavored chole are ready.

serve with puri.. any shape of ur choice.. curd and salad…
