  1. Heat 3 tablespoons of oil in a saucepan.
  2. Add in 1 teaspoon of mustard seeds and wait till they crackle.
  3. Add in a sprig of curry leaves.
  4. Add in a cup of finely chopped onions and sauté till they turn translucent..
  5. Now add in 1/2 cup of chopped tomatoes and cook till they turn mushy..
  6. Add in 1/4 teaspoon turmeric powder.
  7. Add 1/4 teaspoon red chilli powder.
  8. Add 1/2 teaspoon garam masala.
  9. Add 1 teaspoon coriander powder.
  10. Add in a pinch of asafoetida.
  11. Add salt as per taste.
  12. Add in a tablespoon of chopped cilantro leaves and mix well.
  13. Add in the cauliflower florets.
  14. Add in 1/2 a cup of water and mix well.
  15. Cover and cook till the cauliflower gets cooked well.
  16. Garnish with 1 tablespoon cilantro leaves.
  17. Serve hot with chappatis (Indian flat bread) (check out my recipe for Chappatis).
