There's nothing too fancy about this rustic Spanish style omelet, just lots of hearty goodness from crispy fried potatoes and onions. Chopped tomatoes and green onions lend even more flavor and color.

Ingredients of Spanish Omelette

  1. You need of Spanish Sauce.
  2. You need 3 tbsp of Butter.
  3. Make ready 1 large of Onion - Sliced.
  4. It’s 1 large of Green Bell Pepper - Sliced.
  5. Take 4 tsp of Italian Seasoning.
  6. It’s 1 tsp of Garlic Powder.
  7. You need 1 tsp of Sugar.
  8. Prepare 1/2 tsp of Cayenne Pepper.
  9. Take 4 dash of Tabasco Sauce.
  10. Take 2 each of 14.5 ounce cans Stewed Tomatoes.
  11. Make ready 1 of 15 ounce can Tomato Sauce.
  12. It’s of Omelete.
  13. You need 3 large of Eggs - Per Person.
  14. Take 1 tsp of Butter - for each omelete.
  15. Make ready 1/2 cup of Shredded Cheese of choice or you can use sliced American Cheese (My favorite for this omelete).
  16. Prepare 1 of Salt and Pepper to taste.

Make sure the handle is outside the oven as it will become very hot and can burn.Using a knife, peel the onion (discard onion skin in a bowl for easy clean-up), then remove both ends and cut in a medium dice.Strain the potatoes and onion through a colander into a large bowl (set the strained oil aside).Spanish Omelette (Spanish Tortilla) is perfect served hot or cold, and so easy to make!

Spanish Omelette instructions

  1. If you're in a hurry, skip the omelets and just do a big ol' pan of scrambled eggs with cheese and serve the spanish sauce over the top!.
  2. In a skillet over medium-high heat, melt the 3 tablespoons butter. Add the sliced onions and peppers & stir fry for 3 minutes..
  3. Add the seasonings & stir fry for another 3 minutes..
  4. Add the stewed tomatoes & tomato sauce. With the back of a spoon gently break up the stewed tomatoes. Reduce heat and gently simmer until eggs are ready..
  5. To prepare omeletes - Melt 1 teaspoon butter in a small skillet over medium heat. Crack 3 eggs in a bowl and scramble with a fork. Pour the scrambled eggs into the skillet. Using a spatula, as the eggs firm up, lift the edges and let the runny egg pour into the bottom of the pan. When you've done this all the way around & most of the runny egg is gone, gently flip over. Remove skillet from heat, add cheese to 1/2 of the omelette. Fold over in half and slide onto a plate..
  6. Ladle Spanish Sauce over the top of omelete and serve..
  7. This serves 6 - 8 people..
