Well this is the same type of dish where I substituted chole with rajma and followed the same method. It turned out real yummy with full of flavours and a blend of various spices.

Here is the best “Pindi Rajma” recipe we have found so far. This will be really delicious.

Ingredients of Pindi Rajma

  1. You need 1 cup of Rajma (Kidney Beans), soaked overnight.
  2. You need 2 of bay leaves.
  3. It’s 1 " of cinnamon stick.
  4. Take 2-3 of green cardamoms.
  5. Prepare 4-5 of cloves.
  6. Prepare 1-2 of tea bags.
  7. Take 2-3 tbsp. of oil.
  8. Make ready 1 tsp. of carom seeds (ajwain).
  9. It’s 2 of green chilies, slit.
  10. Make ready 1 tsp. of ginger, chopped.
  11. Make ready 1 tsp. of garlic, chopped.
  12. It’s 1/4 tsp. of asafoetida (opt).
  13. You need to taste of salt.
  14. Take 12 tsp. of turmeric powder.
  15. Prepare 1 tsp. of red chili powder.
  16. Prepare 1 tsp. of coriander powder.
  17. Prepare 1 tsp. of cumin powder.
  18. It’s 1 tsp. of kasuri methi (dry fenugreek leaves).
  19. Take 1 tsp. of amchur powder (dry mango powder).
  20. It’s 1 tsp. of anardana powder (pomegranate seeds powder).
  21. Make ready 1/4 cup of tamarind water.
  22. Make ready 1 tsp. of coriander leaves, chopped.

Pindi Rajma step by step

  1. Pressure cook the soaked rajma in 2 cups water, tea bags, salt, bay leaves, cinnamon, cardamoms and cloves. (You can also use a Bouquet Garni / Spice Potli instead) for 8-10 minutes on a low flame after the first whistle..
  2. Open the lid when it cools down. Discard the whole spices and the tea bags..
  3. Heat oil in a pan & temper with carom seeds, asafoetida, green chilies, ginger and garlic. Saute for few seconds..
  4. Add all the dry spices & saute for a few seconds..
  5. Now add the boiled rajma and simmer till it turns slightly thick..
  6. Mash it with a potato masher..
  7. Add the tamarind water & simmer till you get the desired consistency..
  8. When done, switch off the flame and garnish with coriander..
  9. Serve with naan, kulcha, tandoori roti, poori, bhatura, paratha, chapati, plain rice or jeera rice..
