  13. Prepare 1 of Big Eggplant.
  14. Prepare of Chopped Garlic.
  15. Prepare of Dried shrimp.
  16. Take 2 tsp of oyster sauce.
  17. Take 1 tsp of dark soya sauce.
  18. You need 1 tsp of light soya sauce.

Chinese Eggplants with Minced Pork 釀矮瓜 step by step

  1. Ingredients. First Mix the pork with the seasonings (Check under "Meat Seasoning") then add in the fish together with the chives and mix well. Then place minced on the sliced Eggplant. Make sure after sticking it on it will not fall off..
  2. Oil, Med Heat place in egglant with the meat facing down. After 3 mins flip it and heat for another 2 mins. Cooked all Eggplants and place aside. Another pot add in oil and add garlic and dried shrimp (soaked and pat dry earlier) and fry for 30secs. Switch to low heat..

After 8 mins place those eggplants on the plate and let the sauce cook until the thickness desired or add abit of cornstarch water. You can add in shrimp paste if you like those authentic taste in the sauce. Pour Sauce on top garnish and DONE!.
