- You need 300 grams of small brinjals.
- Make ready 1 of big onion sliced.
- Take 1 of small garlic peeled.

- Take 2 tbsp of freshly grated coconut.

- You need 1 tbsp of coriander powder.
- It’s 1 tsp of garam masala powder.
- Make ready 1/2 tsp of turmeric powder.

No roasting, no long hours of cooking required to make this yummy version of aloo baingan.Everything goes raw into one pot and within minutes a delicious curry is ready to devour.Coming to think of it, eggplant was an acquired taste for me.Though I used to enjoy eating veggies from early on, I never enjoyed eating eggplant.

- Heat a tbsp oil in a pan add sliced onions once golden add ginger and garlic saute till golden add coriander leaves mix well remove onto a plate.
- In same pan add groundnut coconut sesame seeds and cumin seeds roast until golden on medium heat remove them too.
- Grind all roasted ingredients adding little water into a fine paste.
- In a pressure cooker add oil when oil is just warm add red chilli turmeric coriander powder garam masala powder salt saute few seconds.
- Add masala paste sautey till oil comes out if masala is sticking to bottom add little water and cook again make sure oil seperates out nicely.
- Now add brinjals if brinjals are too big cut them into 2 or 4 pieces and then add into masala.
- Now saute the brinjals on high heat with masala for a minute or two then add a glass full of water close lid and pressure cook until 2 whistles.
- If using vessel boil the preparation and simmer till brinjals are tender.
- Open cooker once pressure is completely gone garnish with loads of coriander leaves serve with chapati phulka rice.
