  1. Take 2-4 of chicken thighs.
  2. Prepare 3 stalks of green onions.
  3. Prepare 6 cloves of garlic, minced.
  4. It’s of Ginger slices to taste.
  5. You need 2 tbsp of olive oil.
  6. You need 1 1/2 cup of unsalted chicken stock.
  7. Make ready 1 1/2 cups of white rice.
  8. Prepare 3 inch of long piece of ginger, minced.
  9. Make ready 4 of green onions, green sections minced.
  10. Take to taste of Salt.

Hainan Chicken (Instant Pot) instructions

  1. Heat instant pot on the saute function and wait until hot.
  2. Add olive oil, then saute green onions, ginger, and garlic for several minutes.
  3. Pour in chicken stock and deglaze the bottom of the pot, then add chicken legs.
  4. Close instant pot and pressure cook on high for 8 minutes.
  5. Turn off the heat and natural release when done.
  6. When removing chicken legs, place them immediately in an ice bath, then on a cooling rack.
  7. Filter the chicken stock and use it to cook the rice.
  8. Ginger sauce: combine ginger and green onions with a food processor, or mince by hand and place in heat-resistant bowl. Add salt to taste… more is usually required than you would think..
