Ingredients of Kerala / Nadan Chicken Roast

  1. Take 500 gm of Chicken.
  2. Make ready of For Marination.
  3. You need 3 tbsp of Curd.
  4. Make ready 1 tsp of Red Chilli powder.
  5. It’s 1/2 tsp of Turmeric.
  6. Make ready to taste of Salt.
  7. Make ready of For gravy.
  8. Take 4 of Onions thinly sliced.
  9. Prepare 2 of Tomatoes chopped.
  10. Make ready 2 of Green Chillies slit.
  11. Prepare 2 sprig of Curry Leaves.
  12. It’s 1 tbsp of Ginger garlic paste.
  13. Prepare 2 tsp of Coriander powder.
  14. Make ready 2 tsp of Red Chilli powder.
  15. It’s 1 tsp of Fennel powder.
  16. Prepare 1 tsp of Chicken masala or garam masala.
  17. You need 2 Tbsp of Coriander leaves.
  18. Prepare 4-6 tbsp of Coconut oil.

After water evaporates, add salt to sufficient quantity and one cup hot water and cook the chicken.Add vinegar to the remainder gravy, mix and keep.Take the remainder oil from frying chicken.For making the Nadan Chicken Roast, firstly grind together turmeric, chilli, coriander, pepper, garam masala powders, fennel seeds, ginger, garlic paste with the vinegar to a thin paste.

Kerala / Nadan Chicken Roast step by step

  1. Marinate chicken with salt,curd turmeric and red chilli powder. keep it aside for 2 hours.
  2. Heat 2-4 tbsp oil in earthen vessel, add onion, green chilies.
  3. Add little salt and curry leaves.
  4. Saute until onions are completely soft and medium browned.
  5. Add ginger garlic paste and saute until raw aroma goes away.
  6. Add spice powders and mix well.
  7. Add chopped tomatoes and saute until mushy.
  8. Add coriander leaves and marinated chicken. mix well.
  9. Cover and cook, stirring occasionally until cooked..
  10. Increase the heat, Water should completely evaporate.
  11. Add 2 tbsp oil and further dry roast or leave it slightly moist. Serve hot with Rice, Pathri or Parottas.

It has been many days since i wanted to shoot this chicken fry as its not only my favorite.Mix masala paste and continue heating.Add chicken pieces and cook when the oil clears.
