Ram Laddu street food step by step

  1. Soak chana dal over night, drain the water and make a smooth paste(in small batches) by adding two green chillies and ginger powder. Now in the paste add cumin seeds(you can also add ajwain) baking powder,a pinch of asafoetida and salt as par your taste..
  2. Keep whisking the batter in one direction,it will take minimum 10 minutes,so do this until you achieve a fluffy and light consistency,if you don’t whip this batter properly you will not get that crispy crunchy texture.now deep fry them in small portions, don’t overload,my batter was slightly watery so some of them didn’t get that desired round shape. But don’t worry it will taste the same.you have to be very careful while dropping the batter to achieve that round shape…
  3. For green chutney mix all the ingredients, you can also add garlic cloves,I didn’t because I don’t like that garlicky smell much..(coriander leaves, half lemon juice, two tablespoon curd, salt) and make a fine smooth paste, grate one radish, lay them in a serving platter, top them with raam laddus, spread generous amount of green chutney, sprinkle chaat masala and red chilli powder, serve hot..
  4. And enjoy Delhi NCR streetfood at home..raam laddu…
