- You need 200-250 g of Dry ‘Pad Thai’ Rice Noodles.
- Make ready 2 of Eggs.

- It’s 2 cloves of Garlic *finely chopped.
- It’s 1 of small piece Ginger *finely chopped.
- It’s 1 of Red Chilli *OR 1/2 teaspoon Dry Chilli Flakes.
- You need 1 cup of Bean Sprouts.
- Prepare 1/4 of cupful Spring Onion / Garlic Chives.
- Take of Canola Oil for cooking.
- Make ready of Coriander Leaves for serving.
- You need of Chopped Toasted Peanuts.
- Make ready of Lime *cut into wedges.
- Take of <Sauce>.
- You need 2 tablespoons of Tamarind Paste *OR Lime/Lemon Juice, Rice Vinegar.
- It’s 2-3 tablespoons of Brown Sugar.
- Make ready 2 tablespoons of Fish Sauce.
- You need 1 tablespoon of Soy Saucer *optional.
