  1. Set the oven to 180 degrees. Fill two medium sized pans with water heat one up to a simmer and leave the other one as cold water. Cut the ends off the asparagus..
  2. These are very fine asparagus so they don’t need much blanching. Once the pan has come to the simmer throw in the Asparagus for 2 minutes, then lift out and plunge into the cold water, so they don’t over cook..
