  1. ** PRESSURE COOKER: put hamhocks in pressure cooker and cover 3/4 with water. (NEVER FILL A PRESSURE COOKER MORE THAN 3/4 FULL OF LIQUID. cut up onion up into slices, put salt and pepper also in cooker. turn fire on high set weight and lid on pressure cooker. once it starts whistling turn it down to medium and let it whistle for 25 minutes. quick release pressure..
