Quinoa Veggie "Fried Rice" - Quinoa is a wonderful substitute in this protein-packed veggie "fried rice"! Quinoa is one of my favorite ingredients ever.

Ingredients of Veggie (or Quinoa) Rice

  1. You need 1 1/4 cup of uncooked white rice (or Quinoa).
  2. Prepare 1 3/4 cup of water.
  3. It’s 1/2 cup of chopped onion.
  4. Make ready 1/2 cup of chopped green bell pepper.
  5. Take 1 cup of zucchini squash, peeled and diced.
  6. It’s 1 cup of chopped mushrooms.
  7. Prepare 1 tbsp of minced garlic.
  8. Take 2 tbsp of olive oil.
  9. Take 1/2 cup of grated parmesan cheese.
  10. Prepare 1 tsp of oregano (or italian seasoning mix).
  11. Make ready 1 of salt & pepper to taste.

Add in Oyster Sauce and mix.Soy sauce to taste if not salty, or optional sugar if sweetness is desired.Quinoa or rice, which is a better choice for your diet?Both quinoa and brown rice are naturally gluten-free, unless cross-contamination occurs during processing.

  1. Saute veggies in olive oil till soft. (I used the insides of the zucchini for stuffed zucchini boats.)
